Avocado pudding? Sounded crazy to me but it turned out to be crazy good. I used this recipe as a base and then improvised a bit.
I ended up tossing the following in the blender:
1 avocado
1 overripe banana
3 tbsp cacao powder
A squirt of agave
A pinch of salt
A splash of vanilla
1/2 cup almond milk
Strangely, it didn't taste like banana or avocado, just chocolate creamy goodness. Well, maybe there was a hint of banana... Chill the pudding mixture and top with granola for best results.
